On this day in 1919, Dr. John Ewald Siebel passed away… just a week before Prohibition went into effect.  In 1868, this German immigrant founded a school and center for brewing sciences called the Zymotechnic Institute.  By 1872, it’s popularity grew and the name was changed to what we know it to be today, the Siebel Institute of Technology.  Today, you can find the institute housed on the campus of Kendall College in Chicago, Illinois.
